Ingredients
  

  • 2 large sweet potatoes peeled and cubed
  • 2 tbsp olive oil divided
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 can (15 oz) black beans rinsed and drained
  • 2 cups brown rice cooked
  • 1 whole avocado sliced

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with 1 tbsp olive oil, cumin, smoked paprika, and salt.
  3. Roast for 25-30 minutes, tossing halfway, until tender and browned.
  4. Warm black beans in a small skillet with a splash of water and seasoning.
  5. Mix cooked rice with lime juice and cilantro for flavor.
  6. Assemble bowls with rice, roasted potatoes, beans, corn, and avocado.

Notes

  • Store leftovers in airtight containers for up to 4 days.
  • Add avocado just before serving to prevent browning.
