  • 3-4 boneless, skinless chicken breasts about 1.5 lbs
  • 8 oz spaghetti cooked al dente
  • 2 cups shredded sharp cheddar cheese divided
  • 1 cup chopped fresh bell peppers red or yellow preferred
  • 1 can (10.5 oz) cream of chicken soup undiluted
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper adjust to taste
  • 1 tsp garlic powder
  • 0.25 cup green onions sliced, for garnish

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a large casserole dish.
  2. Cook the chicken in a skillet over medium heat until golden and fully cooked (about 6–7 minutes per side). Shred and set aside.
  3. Boil spaghetti in salted water until al dente (8–10 minutes). Drain and let cool slightly.
  4. In a large bowl, mix shredded chicken, cooked spaghetti, cream of chicken soup, bell peppers, spices, and half of the cheddar cheese.
  5. Pour the mixture into the casserole dish. Top with remaining cheese.
  6. Bake uncovered for 25–30 minutes, or until bubbly and golden on top.
  7. Let it rest for 5 minutes. Garnish with green onions before serving.

Notes

Mix cheese off heat for best texture. Adjust cayenne for milder or hotter flavor. Don’t skip the resting period – it helps the casserole set.
