Ingredients
  

  • 2 boneless skinless chicken breasts, about 6 oz each
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp fine salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil for cooking chicken
  • 6 cups chopped romaine lettuce
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels, fresh, frozen, or canned
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced or diced
  • 1/3 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 cup shredded Mexican blend cheese optional
  • 1/3 cup sour cream or plain Greek yogurt for dressing
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil for dressing
  • 1 tsp honey
  • 1/2 tsp chili powder for dressing
  • 1/4 tsp cumin for dressing
  • 1/4 tsp garlic powder for dressing
  • 1-2 tbsp water to thin dressing

Method
 

  1. Pound chicken to even thickness. Mix spices and coat both sides of each breast firmly.
  2. Cook chicken in olive oil over medium-high heat, 5 to 6 minutes per side undisturbed, until 165°F internal. Rest 5 minutes then slice across the grain.
  3. Char corn in the same dry skillet over high heat for 3 minutes, stirring once, until lightly blackened.
  4. Whisk all dressing ingredients together until smooth. Thin with water to a drizzleable consistency.
  5. Build each bowl with romaine, then beans, corn, tomatoes, onion, and avocado. Top with sliced chicken, drizzle dressing over everything, and finish with cilantro.

Notes

  • Pound chicken to even thickness before cooking for uniform doneness and no dry edges.
  • Do not move the chicken during cooking - undisturbed contact with the hot pan builds the seasoned crust.
  • Char corn in a dry skillet without oil for the best smoky flavor - oil steams the corn instead of charring it.
  • Store all components separately for meal prep and add avocado fresh at assembly time only.
