  • 8 slices bread (white, whole wheat, or brioche) crusts removed and flattened
  • 8 links sausage pork, turkey, or vegetarian
  • 4 eggs large
  • 0.5 cup milk any type
  • 1 tsp vanilla extract optional
  • 1 tsp cinnamon ground
  • 1 tbsp butter for frying
  • maple syrup for serving
  • powdered sugar optional, for dusting

Method
 

  1. Cook sausage links in a skillet over medium heat until browned and cooked through. Set aside to cool slightly.
  2. In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract until smooth.
  3. Trim crusts from bread and flatten each slice using a rolling pin.
  4. Place a sausage at one end of the bread slice and roll tightly. Use a toothpick if needed to secure.
  5. Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture to coat evenly.
  6. Place roll-ups seam-side down in the skillet. Cook until all sides are golden brown, about 3–4 minutes total.
  7. Serve warm with maple syrup and powdered sugar if desired.

Notes

Use day-old bread for best results. Avoid over-soaking to prevent sogginess. For crispier roll-ups, bake briefly after frying.
