Ingredients
  

  • 1.5 lbs ribeye or sirloin steak, sliced very thin against the grain
  • 1 tbsp olive oil, divided
  • 1 large yellow onion, halved and thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cremini mushrooms, sliced optional
  • 3 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • salt and black pepper to taste
  • 4 slices provolone or white American cheese
  • fresh parsley for garnish

Method
 

  1. Cook onions in half the oil 6 to 8 minutes. Add peppers and mushrooms, cook 4 to 5 minutes more. Add garlic 30 seconds. Transfer to a plate.
  2. Raise heat to high. Add remaining oil and heat until shimmering. Pat beef dry and sear in batches 90 seconds undisturbed, flip 45 to 60 seconds. Season with salt, pepper, paprika, and Worcestershire.
  3. Return vegetables to skillet and toss with beef over medium heat 1 minute.
  4. Lay cheese over filling. Cover and melt 60 to 90 seconds. Serve in bowls over chosen base.

Notes

  • Pat beef completely dry before searing - wet surface causes steaming not browning.
  • Always cook vegetables and beef separately to protect the sear quality.
  • Freeze steak 20 minutes before slicing for clean thin cuts at home.
  • Sear in batches if needed - overcrowding drops pan temperature immediately.
  • Reheat leftovers in a skillet with 2 tbsp beef broth to restore moisture and texture.
