  • 1–2 hearts romaine lettuce chopped
  • 2 shallots thinly sliced
  • 2 lemons zested and juiced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes optional
  • 1 cup Parmesan cheese freshly grated

Method
 

  1. Chop the romaine lettuce into bite-sized pieces. Rinse thoroughly and dry completely using a salad spinner or paper towels.
  2. In a large bowl, add chopped romaine, thinly sliced shallots, grated Parmesan, and lemon zest. Toss gently to mix.
  3. In a jar or small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and red pepper flakes (if using).
  4. Drizzle the dressing over the salad just before serving. Toss well to coat and serve immediately.

Notes

For a stronger flavor, substitute red onion soaked in cold water for shallots. Add veggies or croutons to bulk it up. Dress only when ready to serve to keep the lettuce crisp.
