- In a large pot over medium-high heat, brown the ground beef until fully cooked and crumbly. Drain excess grease.
- Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper. Sauté for 5 minutes until onion softens and mixture is fragrant.
- Pour in crushed tomatoes, broth, water, and tomato paste. Stir in broken lasagna noodles. Bring to a boil, then reduce to low and simmer covered for 10 minutes.
- Stir in frozen spinach and heavy cream. Simmer uncovered for an additional 5 minutes. Taste and adjust seasoning as needed.
- To serve, place mozzarella in bowls, ladle hot soup over it, then top with a dollop of ricotta and a sprinkle of Parmesan.
Notes
For best results, don’t overcook the pasta. If making ahead, store without the cream and add it fresh when reheating. Add extra broth as needed when reheating, as the noodles will absorb liquid over time.
