Ingredients
  

  • 1 can (15 oz) cannellini beans drained and rinsed
  • 1 can (15 oz) chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 red bell pepper diced
  • ½ red onion finely chopped
  • cup fresh parsley chopped
  • ¼ cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese optional
  • ¼ cup kalamata olives optional

Equipment

  • Large mixing bowl
  • Small jar or bowl
  • Whisk

Method
 

  1. Rinse the beans thoroughly under cold water and drain them well. Pat dry with paper towels if they're very wet.
  2. Chop all your vegetables into roughly similar-sized pieces so every bite has a good mix.
  3. In a large bowl, combine the beans, tomatoes, cucumber, bell pepper, red onion, and parsley.
  4. In a small jar or bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  5. Pour the dressing over the bean mixture and toss everything gently but thoroughly.
  6. Let it sit for at least 15 minutes before serving, or refrigerate for up to an hour for better flavor.
  7. Taste and adjust seasoning with more lemon juice, salt, or pepper if needed.

  • Rinse canned beans well to remove excess sodium.
  • Let the salad rest at least 15 minutes for flavors to develop.
  • Stores well in the fridge for 3-4 days.
