Ingredients
  

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves, minced for meatballs
  • 2 tbsp grated parmesan for meatballs
  • 1 tsp Italian seasoning for meatballs
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil for sauce
  • 3 garlic cloves, minced for sauce
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated parmesan for sauce
  • 1 tsp Italian seasoning for sauce
  • 1/2 tsp red pepper flakes optional
  • salt and black pepper to taste
  • fresh basil for serving

Method
 

  1. Mix all meatball ingredients in a bowl until just combined. Do not overmix.
  2. Roll into 1.5-inch balls, making about 18 to 20 meatballs total.
  3. Sear the meatballs in a hot skillet with olive oil for 4 to 5 minutes per side until golden. Set aside.
  4. Cook garlic in the same skillet for 1 minute, then add sun-dried tomatoes and stir for 1 more minute.
  5. Add chicken broth, heavy cream, parmesan, Italian seasoning, and red pepper flakes. Stir to combine.
  6. Return meatballs to the skillet, cover loosely, and simmer on medium-low for 10 to 12 minutes until cooked through.
  7. Serve hot with fresh basil and extra parmesan on top.

Notes

  • Chill the meatball mixture for 15 minutes if it feels too soft to shape.
  • Do not crowd the skillet during searing - work in batches if needed.
  • Add a splash of broth when reheating to loosen the sauce.
