Ingredients

  • 2 boneless skinless chicken breasts, pounded even
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • salt and black pepper to taste
  • 4 low carb flour tortillas 8 inch, 5g net carbs or fewer
  • 1.5 cups shredded mozzarella cheese
  • 1 cup fresh baby spinach
  • 1/4 cup cream cheese, softened
  • 1 tsp garlic powder for the cream cheese spread
  • optional - roasted red peppers or avocado slices

Equipment

  • Large Skillet
  • Cutting Board
  • Spatula
  • Small mixing bowl

Method

  1. Season chicken with Italian seasoning, smoked paprika, onion powder, salt, and pepper.
  2. Cook garlic in butter for 30 seconds, then add chicken. Cook 4 to 5 minutes per side until golden and cooked through. Rest 3 minutes then slice.
  3. Mix cream cheese with garlic powder and a pinch of salt until smooth.
  4. Spread cream cheese on each tortilla, then layer spinach, chicken, mozzarella, and optional add-ins.
  5. Roll tightly, fold short sides first, and press seam down to seal.
  6. Toast seam-side down in the dry skillet over medium heat for 1 to 2 minutes per side until golden and cheese melts through.
  7. Slice diagonally and serve immediately.

Notes

  • Use low carb tortillas with 5g net carbs or fewer for best results.
  • Medium heat during toasting is essential - high heat chars the exterior before the cheese melts.
  • Store cooked chicken separately and assemble fresh for the crispiest wraps.
  • Reheat cooked wraps in a dry skillet over low heat, not the microwave.
