  • 4 boneless, skinless chicken breasts Pounded to even thickness
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 0.25 cup milk
  • 1 cup seasoned breadcrumbs Italian-style preferred
  • 1 cup Parmesan cheese Freshly grated; divided use
  • 1 cup shredded mozzarella cheese Low-moisture preferred
  • 2 cloves garlic Finely minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil For searing

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Set up three shallow dishes: one with flour, one with beaten eggs and milk, and one with breadcrumbs mixed with half the Parmesan, Italian seasoning, salt, and pepper.
  3. Pat chicken dry. Dredge each breast in flour, then egg wash, then breadcrumb-Parmesan mix. Press the coating firmly.
  4. Heat olive oil in a skillet over medium. Sear chicken for 3–4 minutes per side until golden. Transfer to prepared baking dish.
  5. Combine remaining Parmesan, mozzarella, and minced garlic. Spoon on top of seared chicken.
  6. Bake uncovered for 20–25 minutes or until internal temperature hits 165°F (74°C). Tent with foil if cheese browns too fast.
  7. Let rest 5 minutes before serving.

Notes

Use fresh cheese for best melt. Add red pepper flakes for heat. Gluten-free breadcrumbs work great too. Broil at the end for a bubbly finish.
