Ingredients
  

  • 1 cup pearl couscous dry
  • 1.25 cups vegetable broth or water
  • 15 oz canned chickpeas drained and rinsed
  • 1 medium English cucumber diced small
  • 1/2 cup red onion finely diced
  • 1/3 cup fresh parsley roughly chopped
  • 1/4 cup fresh mint leaves roughly chopped
  • 1/2 cup feta cheese crumbled
  • 1/3 cup roasted pistachios roughly chopped
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Medium saucepan
  • Large mixing bowl
  • Small whisk bowl

Method
 

  1. Cook pearl couscous in broth until absorbed, about 10 minutes. Spread to cool completely.
  2. Prep cucumber, red onion, herbs, chickpeas, feta, and pistachios while couscous cools.
  3. Whisk lemon juice, olive oil, salt, and pepper together until emulsified.
  4. Combine cooled couscous, chickpeas, cucumber, onion, parsley, and mint in a large bowl.
  5. Pour dressing over salad and toss to coat evenly.
  6. Add feta and pistachios, toss gently, and adjust seasoning before serving.

Notes

  • Cool couscous fully before dressing to avoid clumping.
  • Store feta and pistachios separately if prepping ahead.
  • Tastes best after 20 to 30 minutes of resting once assembled.
  • Keeps in the fridge up to 4 days.
