Italian Sub Salad, Two Ways

All the flavors of a classic Italian sub deconstructed into a fresh salad. Choose between a hearty meat-lover's version or a lighter veggie-packed style.

Ingredients
  

  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ¼ cup sliced pepperoncini peppers
  • ¼ cup sliced black olives
  • cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 oz sliced salami cut into strips (2 oz for lighter version)
  • 4 oz sliced ham cut into strips (2 oz for lighter version)
  • 3 oz sliced pepperoni hearty version only
  • 4 oz provolone cheese cubed (2 oz for lighter version)

  • Large mixing bowl
  • Small jar or bowl

  • Knife and cutting board

Method
 

  1. Prepare the dressing by whisking together olive oil, red wine vinegar, oregano, basil, garlic, salt, pepper, and red pepper flakes in a small jar or bowl. Set aside.
  2. Chop the romaine lettuce into bite-sized pieces and add it to a large serving bowl.
  3. Add the tomatoes, red onion, pepperoncini, and olives to the bowl.
  4. For Version One, add all the meats and cheese. For Version Two, add the reduced meat and cheese plus extra vegetables like cucumber and bell pepper.
  5. Drizzle the Italian dressing over everything right before serving.
  6. Toss everything together until well coated, or serve the dressing on the side.

Notes

  • Store dressing separately if prepping ahead.
  • Use quality deli meats for best flavor.
  • Version One is hearty with full meats and cheese.
  • Version Two is lighter with extra vegetables.
  • Keeps 2-3 days in fridge undressed.
