Hibachi Steak Bowls

Seared butter-garlic steak bites over homemade hibachi fried rice with grilled vegetables and yum yum sauce. A full restaurant-quality hibachi bowl ready in 30 minutes at home.

Ingredients
  

  • 1.5 lbs sirloin steak cut into 1 to 1.5 inch cubes
  • 2 tbsp unsalted butter for steak
  • 2 tbsp soy sauce for steak
  • 4 cloves garlic minced
  • 3 cups cooked white rice day-old preferred
  • 2 tbsp unsalted butter for fried rice
  • 2 tbsp soy sauce for fried rice
  • 2 large eggs lightly beaten
  • 1/2 cup frozen peas and carrots thawed
  • 1 medium zucchini sliced into half-moons
  • 1 cup button mushrooms halved
  • 1/2 cup mayonnaise for yum yum sauce
  • 1 tbsp ketchup for yum yum sauce
  • 1 tsp smoked paprika for yum yum sauce

Equipment

  • Cast iron skillet or heavy stainless skillet
  • Large skillet or wok for fried rice
  • Small bowl for yum yum sauce

Method
 

  1. Mix yum yum sauce ingredients together and refrigerate until serving.
  2. Heat cast iron skillet over high heat 2 minutes. Add sesame oil and sear steak cubes undisturbed 90 seconds per side.
  3. Add butter, garlic, and soy sauce. Toss steak to coat and cook 60 seconds more. Remove and tent with foil.
  4. Cook vegetables in the same pan with sesame oil, soy sauce, and butter over high heat 4 to 5 minutes until lightly charred.
  5. Melt butter in a large skillet, add peas and carrots, scramble eggs on the side, then add rice and fry 3 to 4 minutes with soy sauce and sesame oil.
  6. Build bowls with fried rice, steak bites, and vegetables. Drizzle yum yum sauce over the top and garnish with sesame seeds and green onion.

Notes

  • Use day-old or frozen-then-thawed rice for best fried rice texture.
  • Preheat the cast iron pan until very hot before adding steak - this is the key to a proper sear.
  • Cook steak in batches if needed to avoid steaming.
  • Pull steak from heat slightly before fully done as it continues cooking off-heat.
  • Store components separately for best meal prep results.
