Healthy Banana Oatmeal Muffins

Ingredients
  

  • 3 medium very ripe bananas, mashed about 1 cup, heavily spotted or brown
  • 1.5 cups old-fashioned rolled oats
  • 1/2 cup whole wheat flour or all-purpose flour
  • 2 large eggs
  • 1/4 cup honey or pure maple syrup
  • 1/4 cup plain Greek yogurt or unsweetened applesauce
  • 3 tbsp melted coconut oil or neutral vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 1/2 cup mix-ins of choice mini chocolate chips, walnuts, or blueberries

Method
 

  1. Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners or grease well with cooking spray.
  2. Mash bananas thoroughly in a large bowl until almost no lumps remain.
  3. Add eggs, honey, Greek yogurt, melted oil, and vanilla. Whisk until smooth and uniform.
  4. Add oats, flour, baking powder, baking soda, cinnamon, and salt. Stir with a spatula until just combined. Do not overmix. Fold in mix-ins. Rest batter 3 minutes.
  5. Divide batter evenly among 12 muffin cups, filling each three-quarters full. Bake at 350°F for 18 to 22 minutes until tops are golden and a toothpick comes out with just moist crumbs.
  6. Cool in the pan 5 minutes before transferring to a wire rack. Do not remove while hot.

Notes

  • Use heavily spotted or all-brown bananas for the best sweetness and moisture - underripe bananas produce bland, undersweetened muffins.
  • Do not overmix after adding dry ingredients - stir only until no flour streaks remain to keep the crumb tender.
  • Rest batter 3 minutes before scooping so oats absorb moisture and the batter is easier to portion evenly.
  • Test doneness with a toothpick in a center muffin, not an edge muffin, which bakes faster due to direct pan contact.
  • Freeze individually wrapped muffins for up to 3 months. Microwave from frozen 30 to 40 seconds for a quick breakfast.
