Ingredients
  

  • 1 lb ground turkey
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely grated
  • 2 tbsp chopped parsley
  • 1 tbsp chopped dill
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup plain Greek yogurt
  • 1/2 medium cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp chopped dill for tzatziki
  • 1 small clove garlic for tzatziki, grated

Method
 

  1. Mix turkey, breadcrumbs, egg, garlic, onion, herbs, and seasonings gently.
  2. Shape into meatballs and place on a lined baking sheet.
  3. Bake until cooked through and lightly browned.
  4. Stir together the tzatziki ingredients.
  5. Serve the meatballs warm with sauce on the side.

Notes

  • Do not overmix the turkey mixture.
  • Squeeze excess water from the cucumber.
  • Store meatballs and sauce separately.
  • Reheat gently to avoid drying out.
  • Freeze cooked meatballs without tzatziki.
