- Cut beef into bite-sized pieces and halve the baby potatoes. Set aside.
- Heat olive oil in a skillet over medium-high heat. Sear the beef in batches until browned on all sides. Set aside.
- In a mixing bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
- In the slow cooker, layer the potatoes and seared beef. Pour garlic butter sauce over them. Add beef broth.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours until beef is tender and potatoes are soft.
- Let rest for 10 minutes before serving. Garnish with fresh herbs if desired.
