Preheat oven to 375°F.
Caramelize onions in butter and olive oil over medium-low heat for 30 to 35 minutes until deeply amber.
Add garlic and thyme, stir 1 minute.
Sear chicken over medium-high for 3 to 4 minutes, then stir into onions.
Add flour and stir 1 minute to cook out the raw taste.
Deglaze with wine, then add broth, Worcestershire, and soy sauce. Simmer briefly.
Add dry orzo and press into liquid. Stir once to distribute.
Top with Gruyere and bake uncovered at 375°F for 22 to 26 minutes until golden.
Rest 5 minutes before serving with fresh herbs.
