Whisk all sauce ingredients together in a small bowl. Taste and set aside.
Heat oil in a large skillet over medium-high. Add pork, let sit 2 minutes undisturbed, then break apart and cook until no pink remains, about 5 minutes. Drain excess fat leaving about 1 tbsp.
Push pork to edges. Add garlic, ginger, and white onion parts to center. Cook 60 seconds stirring constantly. Mix everything together.
Add cabbage and carrots. Toss to combine. Cook over medium-high heat 4 to 5 minutes, stirring occasionally, until cabbage is wilted and slightly golden at the edges.
Pour sauce over the pan. Toss to coat evenly. Cook 1 to 2 more minutes until glossy and cohesive. Taste and adjust seasoning.
Serve topped with green onion greens, sesame seeds, and sriracha on the side.
