Ingredients
  

  • 1 1/2 lbs large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes, optional
  • 2 tbsp chopped parsley

Equipment

Method
 

  1. Cook the shrimp briefly, then set aside.
  2. Build the sauce with garlic, sun-dried tomatoes, broth, cream, and parmesan.
  3. Simmer until lightly thickened, then return the shrimp to warm through.
  4. Finish with parsley and serve hot.

Notes

  • Do not overcook the shrimp.
  • Use a wide skillet for even sauce reduction.
  • Store leftovers in the refrigerator for up to 2 days.
  • Reheat gently over low heat.
