Ingredients
  

  • 8 small tortillas
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic
  • 2 cans refried beans
  • 2 cups red enchilada sauce
  • 2 cups shredded cheese

Method
 

  1. Cook onion and garlic, then warm the beans with spices.
  2. Fill tortillas with bean mixture and cheese, then roll.
  3. Arrange in baking dish and cover with sauce and cheese.
  4. Bake until hot and bubbly.
  5. Finish with cilantro and serve warm.
