Ingredients
  

  • 8 oz chow mein noodles
  • 2 tbsp vegetable oil
  • 1 cup sliced cabbage
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell pepper
  • 1/2 cup sliced onion
  • 1 cup cooked chicken, shrimp, or tofu
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
  • 2 stalks green onions, sliced

Method
 

  1. Cook the noodles and drain well.
  2. Mix the sauce ingredients in a small bowl.
  3. Stir-fry the vegetables and protein, then add the noodles and sauce.
  4. Let the noodles crisp in spots before tossing again.
  5. Finish with green onions and serve hot.

Notes

  • Drain noodles very well before frying.
  • Do not overcrowd the pan.
  • Let noodles sit briefly to create crisp spots.
  • Reheat leftovers in a skillet for best texture.
  • Adjust soy sauce to taste at the end.
