Ingredients
  

  • 1/4 cup soy sauce or tamari
  • 3 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp neutral oil vegetable, canola, or avocado
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 1/2 tsp red pepper flakes optional
  • 1 tsp sesame seeds optional

Equipment

  • Jar with lid
  • Microplane or grater
  • Measuring spoons

Method
 

  1. Add soy sauce, rice vinegar, sesame oil, neutral oil, and honey to jar.
  2. Mince garlic finely or press through garlic press.
  3. Grate fresh ginger using microplane or box grater.
  4. Add garlic, ginger, and red pepper flakes to jar.
  5. Close lid tightly and shake vigorously for 30 seconds.
  6. Taste and adjust sweetness, tang, or saltiness as needed.
  7. Let sit 5 minutes for flavors to meld.
  8. Shake again before using on salad.

Notes

  • Use toasted sesame oil for authentic flavor.
  • Fresh ginger is essential, not ground ginger.
  • Stores up to 2 weeks in refrigerator.
