Ingredients
  

  • 6 cups fresh baby spinach
  • cups fresh strawberries sliced
  • ½ cup crumbled feta cheese
  • cup candied pecans
  • ¼ cup red onion thinly sliced, optional
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Method
 

  1. Wash and dry the spinach thoroughly, then place it in a large salad bowl.
  2. Slice the strawberries and add them to the bowl along with the crumbled feta and candied pecans.
  3. If using red onion, slice it thinly and add it to the mix.
  4. In a small jar or bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth.
  5. Drizzle the dressing over the salad just before serving and toss gently to combine.

Notes

  • Dress the salad right before serving to prevent wilting.
  • Store components separately for meal prep.
  • Toast regular nuts in a dry skillet if you don't have candied pecans.
